Summer is here!  Along with the anticipated arrival of summer we celebrate the cheer of the season and my little prince Lucien with the creation of a half birthday dessert featuring Cheerios™

1S9A5451I rolled my eyes at the idea of a 1/2 Birthday.  But the new mom in me said to go for it.  I set the scene of Prince Lucien’s half Birthday kidnic on the Turtle Pond lawn of Central Park.  It set the perfect summer day to enjoy a picnic at le Château de Lucien.  I created a no hassle menu, including a tasty & fun dessert with Cheerios™.  Children easily acquire food allergies.  This was my biggest fear and concern in selecting menu choices.  Instead of a traditional cake, I went for a kid safe dessert experience for Lucien and his royal court.

Realizing that Cheerios are usually the choice of a lot of parents for their children; I prepared a sweet potato pie utilizing Cheerios as a crumble.  Plated on an appetizer spoon, I sprinkled a crumbled mixture of honey nut cheerios™, apple cheerios™ and graham cracker atop the sweet potato.  What a beautiful interpretation of a classic dessert and an everlasting summer memory we created with our family, friends and Cheerios™. #SummerOfCheerios

To achieve this royal dessert you can head to your local Walmart for a wide variety of Cheerios flavors (Cheerios™, Honey Nut Cheerios™, Fruity Cheerios™, Multi-Grain Cheerios™, Frosted Cheerios™, Apple Cinnamon Cheerios™, Chocolate Cheerios™).  I purchased all of the listed ingredients at Walmart and found coupons to save on my shopping here.

WHAT I USED:

5 Large Sweet Potatoes (peeled and cut in cubes)

1/2 Cup of Brown Sugar

1/2 Cup Baby Milk (any brand)

1Teaspoon of fresh grated ginger

1/2 cup Honey Nut Cheerios™ (crushed )

1/2 cup Apple Cheerios™ (crushed)

1/2 cup Graham Crackers (crushed/any brand)

  1. Peel and cut the Sweet potatoes into small cubes
  2. Boil sweet potato in a large pot with about a half cup of water for 30-45 min
  3.  Use a potato masher and mash the potatoes; then add the baby milk, brown sugar and ginger.  Mix with a spoon until it is the desired consistency.
  4. In a food processor crush the Cheerios™ and Graham Cracker mixture.
  5.  Plate the sweet potatoes as desired and sprinkle the crumble atop

VOILA…
